This rub is the spirit of New Orleans.  The boldness of cayenne, the tangy kick of sweet paprika; this is how Cajun food was meant to taste.  It's a truly nuanced regional flavor that will transport you to another place.  For any dish you want to kick up a notch, this spice blend certainly does the job.

Uses:  Give chicken, shrimp, beef or pork that Cajun flair.  Makes great "dirty rice" or use it to create a spicy creole-inspired pasta dinner.

Ingredients:  Unrefined sea salt, paprika, onion, garlic, cayenne, black pepper

Perfect Prime Rib

8 lb Rib Roast, bone-in

¼ cup Extra Virgin Olive Oil

1/3 cup s.a.l.t. sisters Blackening Cajun Rub & Seasoning

 Preheat oven to 500°.  Rub the roast with EVOO and fully coat with the Blackening Cajun Rub.  The rub should create an even crust over the beef.  Place roast on the bottom rack of the oven; roast uncovered for 45 minutes.  Reduce the heat to 325°, cover with foil and cook for an additional 25 minutes.  For medium rare, internal temperature should be approx. 125°.  Remove from oven and let rest for 15 minutes. Slice and serve.
